Chateau La Chapelle Monrepos
Château La Chapelle Monrepos is situated in Belvès de Castillon, near Castillon la Bataille, which is east of Saint Emilion.
The origin of this name comes from the existence of a chapel,which was used as a resting place by the pilgrims on their way to Saint Jacques de Compostelle.
The soil is composed of clay and limestone with the presence of flint, which gives the wine a nervy, fine quality. In order to fix the fruitiness, a cooled maceration is carried out for5 days before fermentation begins. Following this, the next stage is the alcoholic fermentation, which is temperature controlled at 25°-26°C, bringing roundness and fatness whilst still respecting the fruit content.
There then takes place a long maceration after the fermentation period, which is carried out between 27°-28°C to ensure the tannic structure of the wine.
The wine is then aged in French oak barrels for 12 to 18 months depending on the vintage.
